Kudos to P.J. Hamel ! I need to put more calcium in my diet, so I asked KAF about how to use almond flour (very rich in calcium). They sent me to this blog and it was everything I could have hoped for: straightforward answers on "how-to" plus a solid analysis of how recipes compare, with lots of photos. I feel like I learned a lot, and much more confident about how and when -- and when not -- to use almond flour. Great work KAF.
