Can you answer a question for me re using almond flour as a partial or whole substitution in a recipe - I know that all purpose flour = 120 grams per cup so if I want to substitute a cup of almond flour, do I use a scale and then measure and use 120 grams of the almond flour since both those flours don't weigh the same? I'm assuming that you go by the gram measurement on the scale for whatever flour you want to use (not just almond) and equal that measurement to the 120 grams per cup for all purpose flour? Is that correct? Thank you, I've been so confused about this!
