Hi Marie! We recommend in this article to use almond flour for no more than 25% of the flour in a non-yeasted recipe. If you'd like to use more in your angel food cake, it will still taste nice, but it will be very dense. (Especially when compared to feather-light angel food cake.) We recommend instead trying our Strawberry Almond Flour Cake recipe which results in a fluffy, moist, and tender cake. Happy baking! Annabelle@KAF
