Hi Andrea! There are really only two kinds of almond flour; toasted, and not toasted. The differences are in how finely it's ground. Our Almond Flour is very finely ground so it might be closer to the softer, finer consistency you're thinking of. You could always put it in the food processor to make it even finer. Annabelle@KAF
