I noticed you did not mention xanthan gum or guar gum as an additive in any of your recipes. I have been experimenting with 100% nut flours and am having limited success by trying different amounts of gums, combined or by themselves. Finally, this morning, a biscuit recipe that is 95% on target, good texture, great taste, holds together very well, splits easily, etc. Since you have far more experience baking than I do , could you comment on gums as additives?
