Beck, people have made starters from all kinds of ingredients, including potatoes; but ultimately they're combined with carbohydrate-rich flour to make bread, so you're really not reducing your carb intake by a significant amount. You can purchase "low carb" bread, and there are various paleo recipes for low-carb bread (like this almond flour bread); beyond this, you may want to speak to a dietitian about the best types of bread to eat on a low-carb diet.
