Almond flour has a lot going for it, so don't be concerned with the fat. In fact almonds, as nuts go, are among the least fatty, and as PJ says the fat is healthy fat. Most of us get too many fats containing omega 6. We need to offset those unhealthy fats with omega 3 fats such as found in almonds. Furthermore Almond flour has 4 times the protein of wheat flour and 1/4 the carbs! It is also gluten free!
