Hi CareBear, we're big fans of refrigerating many kinds of cookie dough, and find that this can reduce spreading and result in richer flavor and color in the baked cookies. However, if your recipe calls for baking the cookies right away, I would follow the directions, since some types of dough may not benefit from a rest in the refrigerator.
