I'd like to make your 50% Baker's Percentage version of the Soft and Chewy Oatmeal cookie. Because that was the only reduced sugar version that got a PASS. Found the comment where you explain how you came up with the mysterious 87% for the original recipe--which, BTW, uses the high-end range of the brown sugar.
So I computed: 29g granulated sugar, 61g brown sugar, and 37g honey. Need to reduce spices, too. Will try reducing spices to half. Might try adding 1 tsp vinegar, the trick shown in your other oatmeal cookie recipes.
