You must point out that omitting sugar, at some point the reduction in sugar will cause spoilage, as sugar is a preservative. Cookies made with less sugar will at some point get moldy, unless refrigerated. Can applesauce be substitued in cookies as with cakes?
The best thing is to just eat one cookie.
There are many French recipes that rely mostly on butter and egg for flavor, those are the ones to switch to.
