Good question, Kathryn! A shorter chill (up to around 30 minutes) will decrease spreading, as it's just a change in temperature and not structure. But a longer time in the freezer, like the 24 freeze shown here, will increase the spreading, as it affects the actual structure of your dough. Cookie chemistry is so interesting!
