Great article, Annabelle, but your arithmetic is off here. Kay would need to reduce the white sugar by 25% AND reduce the brown sugar by 25% in order to have reduced the total sugar by 25%. If the recipe called for equal amounts of white and brown and she wanted to keep the brown unchanged, she'd have to reduce the white by 50% in order to reduce the total by 25%.
