Re: reducing sugar in chocolate chip cookies. My objective is to reduce the sugar in CCC's. My recipe is the Toll House recipe. One thing I will do is replace the semi-sweet choc. with 60% choc., which will reduce the sugar per cookie. I also plan to reduce the sugar from 3/4 cup to less. The problem is I don't understand the bakers weight. For example, 2.25 cups flour is 270g. The total weight of the sugars is only 260g. So how did the author get 113% sugar? Please explain in detail. Thanks!!
