No problem, Holly! The 87% was found by combining the sugar, brown sugar, and the sugar portion of honey. (Roughly 30% of honey is water) So, it was a total of about 201 g of sugars. Then, the weight of the flour and oats was combined to 234g to create the 100% that the rest of the equations were based on. With these numbers, 201 g sugars and 234 g flour, we arrived at 86%-87% depending on the amount of water on your honey. We hope this helps! Annabelle@KAF
