Thanks for all this great information. I've searched your site and can't find much on low carb recipes. My husband is a cancer survivor and we are trying to eat low carb, but still enjoy bread and desserts.
This sugar reduction is helpful, but maybe one day you can modify some recipes to show how to reduce carbs without sacrificing texture and flavor. I write historical cookbooks and playing with ingredients is fun, but challenging. Maybe you have something in the works already.
