Hi Jann! For two, medium crust pan pizzas we'd recommend using your two, 10" skillets. You'll want to oil the pans well to prevent sticking. The baking temperature will be the same but the baking time will probably be closer to 18 to 22 minutes depending on what kind of toppings are used. We hope this helps and happy baking!
