Good question, Courtney. Feel free to go ahead and double all of the ingredients in the recipe, including the starter. As for the amount of yeast, you can use anywhere from 1-2x the amount; more yeast will result in a faster rise but less flavor development, and less yeast leading to more flavor development but a longer rise.
