I`ve a lot to learn about sourdough. I made some pancakes with my leftover starter, and they were ok, but the sour flavor was not as nice as I had expected. The starter smelled good, but I think the pancakes were too sour. Is it just me, or does the starter actually make a big difference in the taste of the product? I love San Francisco sourdough bread but my pancakes did not taste anything like the flavor I know.
