I always buy fresh cheese from the deli at the store, preferably, Boars Head. I use a mixture of provolone, brick, and mozarella. Keep in mind the provolone is more salty than the other two so I don't use quite as much of it. I am told you can grate the cheese and put it in the freezer and it melts better although I never tried it. I like fresh. Mine also browns perfectly!
