PJ- Thanks to all of the pizza help from KAF blogs, I think I make pretty good pizza. This looks really different and I will try this. But I do have a slightly off topic question. My crust is good, my sauce is good, but I am never very satisfied with the way the cheese turns out. I've experimented - fresh or not, different types of cheese, more cheese versus less cheese and I feel like I am not getting that nice stretchy bubbly outcome I want. Any suggestions?
