Hi there, If you're mixing in a machine, the dough should come together in about 2-3 minutes on low speed. It should be smooth and a little tacky to the touch, but not gluey. You also don't want dry bits of flour in the bottom of the bowl either, that means you need more water. If the dough is under kneaded, you'll get a short loaf with a coarse texture. If it's over kneaded, the gluten strands will be ruined and the bread dough will be very pale and won't rise well. Hope this helps. ~ MJ
