I'm getting one of these ovens in my kitchen remodel in a few months. Did you ever work it out? If so, I'd love to hear what worked for you. If not, I would suggest looking at the Anova Precision Oven (which also has a steam function) website. They have a program/recipe that could give you a starting point.
