Hi Cassie, we find that cast iron holds the heat best, but you're correct that this kind of treatment can damage a treasured pan. My solution was to purchase a relatively inexpensive cast iron pan that is my designated steaming pan, and only use it for this purpose. That way I have a pan that I don't worry about if it gets a little rusty!
