Hi Anne, you're totally correct that the steaming process can be quite damaging to a cast iron pan, so I don't recommend using a pan that you cherish for this purpose. You might want to consider purchasing a relatively inexpensive pan that is designated for steaming use only. It will still function fine if the finish erodes, and you won't have to worry about keeping it in good shape for other uses.
