Hi Max, I apologize for the delay in responding to your question! I've been away for a few weeks. I'm honestly not sure what would be the best mode, but I would experiment with both the top and bottom, and then just the bottom and see which gives you the best results. More heat at the beginning will likely give you the best oven spring, but I'm not sure how the upper heat will impact your steaming method.
