Hi Sharon, check out this blog post on baking in a cold Dutch oven. With this method the pot and loaf are put in a cold oven, and then the oven is heated to the desired baking temperature. Placing the pot and loaf in a preheated oven is also generally an option, but with ceramic pots that might be subject to thermal shock, you may want to take some caution around baking a cold loaf straight from the refrigerator. I would recommend at least 45 minutes for the dough and pot to acclimate at room temperature before going into a preheated oven.
