Hi Dave, are you removing the lid part way through the bake? It's important to trap the steam during the initial part of the bake, but to finish baking in a dry oven. Be sure to remove the lid after 20-30 minutes of baking, depending on which Dutch oven method you choose. If you're baking at a temperature over 450 degrees, it may also be helpful to lower the baking temperature a bit. Barb
