Hi Cathy, it sounds like Dutch oven baking might be the best solution for you. Although often this means baking a round loaf, we also sell this Long Covered Baker, which gives you the option of baking a longer loaf. Thinking baguettes? We've got you "covered" (get it?) there as well with our Baguette Baker. I love my Dutch oven and use it all the time! While different kinds of covered bakers may require different baking routines (cold start, preheated oven, or preheated pot), I've tried all these methods and got great results with each.
