What's your thoughts on convection ovens? I usually bake with method #2 and convection and I get good results, but not as good as method #4. Will turning off convection help? Also, I'm thinking that I need to get one of those fancy french razors on a stick. I've tried using a regular box cutter razor blade and sharp kitchen knives and I don't think I get a good score.
