My go to recipe is James Beard banana bread from Beard on Bread. He offers two versions. One is with honey, but I prefer the less dense one.
1/2 cup (1 stick) butter, at room temperature.
1 cup sugar.
2 eggs.
1 cup mashed, very ripe bananas (2 large or 3 medium)
2 cups all-purpose flour.
1 teaspoon baking soda.
1/2 teaspoon salt.
1/3 cup milk.
