This is the first time I’ve seen the difference between using a hot Dutch oven vs cold, and why you want to use one vs the other. Extremely helpful, and I feel like I finally have the crust I dreamed of before but eluded me. I tried spraying, lava rocks, cast iron skillet with water, sometimes all, and still didn’t get the crisp crust I wanted. Excellent blog post!
