Hi Delaney. Using a flat lidded Dutch Oven is just fine for bread baking! The two ovens we offer (the Bread Baking Crock and the Staub 5 Qt.) are both wonderful vessels to use. So long as you are using an appropriate amount of dough in each pot, it won't rise up into the base of the lid. Both of those bakers are great for holding a two pound loaf (a recipe that uses between 4 to 5 cups of flour). Happy Baking!
