Hi PepperPod, yes, I think when you preheat the pot empty, it's fine to remove the lid after 20 minutes, which will give you more time after the lid is removed for the bread to continue baking and releasing moisture. If you're putting the bread and pot into a preheated oven, I recommend removing the lid after 25 minutes of baking. That being said, other factors (such as over-fermented dough) can contribute to a gummy structure.
