I have the same issue as Caitlin, except I get gumminess from trying to bake sourdough bread (KAF’s no-knead recipe). Just to confirm I’ve understood your advice, I’m attaching the baking instructions from the recipe above:

« Bake for 25 to 30 minutes; remove the lid and bake for another 5 to 10 minutes, until the loaf browns fully.« 

This would equal a total baking time between 30 and 40 minutes. Are you thinking that the gumminess might be reduced if I take the lid off after 15 or 20 minutes and then continue backing for another 15 or 20 minutes?
