Hi April, we don't recommend preheating a glass or Pyrex loaf pan empty, nor is it always necessary to preheat the pan if you don't have a pan that is up for that type of use; check out our post on baking in a cold Dutch oven. I think it might work reasonably well to securely attach a dome of foil above your loaf pan and take it off after about 20-25 minutes of baking. We also have the Glazed Long Covered Baker if you'd like to invest in a rectangular pot that functions just like a Dutch oven.
