I cannot count how many times I have made this recipe. It’s mostly miss. Something happens after my first rise, frig storage, second rise (successful) and the bake (unsuccessful). I’m using a parchment lined crueset. I think its the slashing that deflates the dough and it never recovers in the oven. I seem to mostly end up with an ok crumb, but a flat top and no ear. Could it be that I’m using a razor blade instead of a true lame? Any help would be most appreciated
