Hi Donna, you are correct that the bowl/parchment paper method would be used instead of a brotform for the shaped rise. I don't usually spray the top with cooking spray, but if you've had good luck with this method, you could certainly do so. I usually spray with water and sprinkle with seeds before baking. You do get a fair amount of seed shedding, so I try to pat them gently into the dough before baking.
