Hi Diane, I'm not sure if Le Creuset recommends this type of use, so I would consult with them. If they discourage this method, you can still get excellent results either with a cold start, or placing the pot/dough in a preheated oven. The size of your pot means you can bake quite a large loaf (up to 1400g/3lb of dough), but smaller loaves may tend to spread a bit.
