Hi Van, you can certainly use your glazed long covered baker in a similar way. Check out our No-Knead Sourdough Bread recipe that fits well in this pan, and offers directions for how to use it in this particular recipe. This will give you a good idea of how much dough fits well in your pan. Be sure to grease the pan well, or line with greased parchment paper, if you're planning to let the dough rise in your glazed long covered baker for the shaped rise, as this is a situation where the dough is more likely to stick.
