Hi, thanks for the recipe. I tried this in a preheated cast iron dutch oven. When I transferred the loaf from the parchment paper to the pot the loaf flattened. When the loaf came out of the oven it was much shallower than I expected -- it didn't rise so much in the oven. Was the problem in the transfer from the parchment to the dutch oven? I'm thinking I should have just gently lifted the entire parchment paper and put that in the oven to avoid distubing the loaf. Thanks for your insights.
