Hi Barbara! If you'll be baking one loaf at a time, we'd recommend using your 3.5-quart Dutch oven. If you'll be baking the whole recipe as one larger loaf, you'll want to bake it in the 7.5-quart Dutch oven. You sure can let the dough rise overnight in the fridge, we'd recommend doing the first rise at room temperature and then shaping the loaves (or loaf) and letting them rest for about 20 minutes before letting them finish rising overnight in the fridge. The next morning they should be fully proofed and ready to bake. We hope this helps and happy baking!
