Noticed that you didn't mention the long rest before baking. All the no-knead recipes I've seen calls for leaving the dough in fridge for at least 12 hours. (mix, let rise 2-3 hours, put in fridge 12 hours - 7 days, remove and let rest 40 minutes, then bake)
