Hi there, Matt! We haven't tried baking bread in a steel stockpot, but you're welcome to experiment with it. The steel pot may not retain heat and steam the same way a ceramic or cast iron pot will though. Just be careful that the higher temperature and pre-heating the pot empty doesn't warp it — we'd recommend looking to the manufacturer for information on this. Be well and happy baking!
