Hi Lisa, the video on step 6 of this guide has some great visuals on shaping a boule so it has a really nice tight skin, allowing it to rise upward rather than out. As for the crust, we don't know the recipe so we don't know if it's designed to have a super crispy crust or not. Some recipes, depending on their ingredients, won't have that type of crust even if they are baked in a Dutch oven, so it's very difficult to troubleshoot without being able to see the recipe.
