Hi Paul! You can really use it for any type of bread that you'd like, it definitely doesn't need to be no-knead. Breads with more moisture tend to benefit from it more because they produce more steam, but it certainly wouldn't hurt to make a bread with lower moisture in a Dutch oven as well.
