Heather, you can certainly do that if you don't have time for it to rise at room temperature! We find that the cooler, slower rise lends a better flavor to the resulting loaf, but feel free to use your proofer if you need your bread in a hurry. You'll probably need to experiment with various temperatures and times to find the combination that works best for your kitchen and your schedule. Happy baking! Kat@KAF
