Just got the Emile Henry Long Covered enamel baker. I'm amortising the cost by making more bread than my freezer can hold. I've been a baker for years, but just bought into the dutch oven method. LOVE IT! The loaves look and taste the way I always wanted them to, but couldn't achieve because the CIA methods I learned use professional ovens and my home oven is ... of course ... different. Now I'm getting the results. The first bread was the No-Knead Sourdough Bread featured in the last catalogue. It was spectacular ... gone in two days. Next was the Crusty White Bread ... also spectacular ...I got two loaves out of the formula. One loaf left. May go for the chocolate/cherry/pecan bread next. Gimme more. Love King Arthur.
