Hi Bill, we love using this baking method for no-knead dough, but you're welcome to use it with regular (kneaded) dough too! We don't usually use a no-knead approach with sourdough, which often benefits from the manipulation and gluten-development that comes from kneading. Regardless, go ahead and knead your sourdough as called for in the recipe. (Don't have a recipe? Try making our Rustic Sourdough Bread.) Bake it as outlined in this article, preheating your Dutch oven to ensure there's a nice burst of steam as soon as the dough goes into the oven. Happy bread baking! Kye@KAF
