Hi Andrea, try spraying your parchment paper with non-stick spray before dusting with a bit of semolina flour or cornmeal. This creates a buffer between the parchment paper and loaf to prevent sticking. When the dough is rising, cover it with a bit of plastic wrap that's lightly greased with non-stick spray.
