Hi Sybil, where did the recipe come from that you mentioned? It sounds like the ratios are slightly off, because 3 cups of flour weighs about 12 3/4 ounces, and that would make it almost equal to the amount of water (1 1/2 cups = 12 ounces). We'd recommend using a different recipe, like perhaps half of our No-Knead Crusty White Bread recipe, and seeing if you get better results. If possible, we recommend measuring your ingredients by weight using a scale, and also using King Arthur All-Purpose Flour. Some other brands of flour are softer than ours, which means you need to use more of them, and you often won't get the same results. We hope that helps improve your next loaf! Kye@KAF
